  • 2 Peaches
  • ½ piece of bread
  • 1 clove of garlic
  • 100 grams of ham
  • 12 cherry tomatoes
  • ½ cucumber
  • 4 Burrata cheese
  • 100 grams of mixed lettuce
  • 1 red onion
  • sprigs of rosemary
  • Olive oil

  • 75 milliliters of extra virgin olive oil
  • 25 milliliters of Sherry vinegar
  • 1 sprig of thyme
  • Black pepper
  • Salt

How to make ham and peach (or mango) burrata salad

1. Cut the peach

Peel the peaches and cut them into not very fine segments, removing the bones. Cut the bread into small cubes. Peel the garlic and wash the rosemary.

Heat a pan of oil in a pan and add the garlic, 1 sprig of rosemary and the bread cubes. Fry, stirring, until golden brown on all sides. Remove them and adjust them with a little salt and pepper.

Clean the ham by removing the skin and fillets and cut into sticks. Saute them, with 1 sprig of rosemary, in another pan with a few drops of oil and remove them.

4. Prepare the tomatoes and cucumber

Wash the tomatoes and cucumber and dry well; cut the first in half and the second in slices.

Wash the salad leaves and drain them. Peel the onion and cut it into julienne strips.

6. Make the vinaigrette

Wash the thyme and chop. Arrange it in a container and add virgin olive oil, vinegar, salt and freshly ground pepper. Mix until you get an emulsified sauce.

7. Assemble the salad

Divide the salad leaves among 4 bowls and place the strained whey burrata on top, in the center.

Arrange the peach wedges, bacon, fried bread, tomatoes, cucumber and onion around. Dress with the vinaigrette, garnish with the remaining rosemary and serve.

Tips and variations for Burrata salad with bacon and peaches

  • When you fry the cubes bread AND hamTry to leave them on paper towels. This way they won’t be greasy.
  • Many ingredients can be added to this salad. For example, carrots, colored pepperssome Candied tomatoes… Some more mushrooms fried.
  • You can also add some the pinions toast or some nuts torn apart.
  • Replace the burrata with some slices goat cheese lightly fried in a pan.
