Peel the onion and cut it into julienne strips. 6. Make the vinaigrette Wash the thyme and chop. Arrange it in a container and add virgin olive oil, vinegar, salt and freshly ground pepper. Mix until you get an emulsified sauce. 7. Assemble the salad Divide the salad leaves among 4 bowls and place the strained whey burrata on top, in the center. 8. Dress with vinaigrette and serve Arrange the peach wedges, bacon, fried bread, tomatoes, cucumber and onion around. Dress with the vinaigrette, garnish with the remaining rosemary and serve.
