Ranch Mole Recipe “From My Farm to Your Kitchen”

Ingredients:
3 kilograms chicken in pieces (legs and thighs)
9 cloves of garlic
1 and 1/2 onions
10 black chilies
10 mulatto peppers
10 pasilla chilies
Oil
Chicken soup
1 tomato
1 serrano chili
1 tomato
1 tortilla
1 packet of crackers
1 roll
1 table chocolate tablet
1 large handful of pepper
1 handful of cloves
1 handful of black pepper
1 piece of ginger
1/4 of sesame
2 spoons of sugar

Procedures:
Place the pieces chicken in a pot of water. Add salt, 3 garlic cloves and 1/2 onion. Put it on the fire until cooked.

In a pan with hot oil, fry each of the chili peppers (black, mulato and pasilla) that should already be fried. It is important to look at them and not leave them for too long because, as explained Mrs. Angelathey are bitter.

After the oil, toss the chilies into a pot of broth chicken to soak them.

Michoacán enchiladas recipe by Doña Ángela

Ingredients:
15 guajillo chilies
Soup e chicken
4 tomatoes
6 serrano peppers
2 onions
3 cloves of garlic
1 handful of oregano
4 carrots
6 potatoes
1 lettuce
1/4 of cotija cheese
1 1/2 kilos chicken Cooked

Procedures:
Drain and wash the chiles. We put them in a pot with meat broth chicken and bring it to the fire. Remove when it starts to boil. Wait for them to cool slightly and mix together with 1/2 onion, garlic cloves, oregano and salt to taste.

Put the tomatoes, serrano peppers and garlic in a pot of water and put them on the fire. When they are baked, mix them together with 1/2 chopped onion and salt to taste.

Peel the potatoes and carrots and chop them. Then put them to boil in water with a little salt.

Cut the lettuce and disinfect it.

Chop an onion and mix with the cheese.

Pour oil into a pan and once it is hot, add the pieces chicken. When they are golden, remove them.

Fry the carrot and potatoes in the same pan with oil. Add some of the guajillo chili mixture.

To prepare enchiladas, pass the tortillas from the guajillo chili sauce and fry, it is important to say that the tortillas must be cold. While they are in the oil, fill them with the cheese and onion mixture.

To serve, set enchiladas with a piece of chicken, a tablespoon of potatoes and carrots and garnish with lettuce and some fresh cheese.

Those who prefer a little more spice can add tomato sauce.
