‘Breakfast’ Burritos! Everyone loves them, they are very easy to prepare and only have three ingredients. Excellent recipe to take advantage of the inclusion of vegetables in the egg omelet, such as spinach, peppers or tomatoes. This time I accompanied them with avocado on the side.

- Wheat tortillas with a diameter of 16 cm (they are of classic size, not large)
- 4 eggs
- 6 slices Cheddar cheese
- A few drops of olive oil or a ¼ teaspoon of butter.
Heat a small non-stick pan and add a few drops of olive oil, just to coat the bottom. Then add the previously beaten and seasoned eggs. Cook the tortilla, it will be a few minutes per side. Remove it and cut it into 6 rectangles. Also cut the slices of cheddar cheese into 2 rectangles. Then assemble the burritos. Place the tortilla first, then the cheese in the middle, on top of it the egg and then the other cheese, as if making a tower, fold the sides inwards and then wrap the vertical ones. Then close the burritos in the pan over medium heat, starting from the folded side, just until lightly browned. Serve with avocado. Enjoy them!
