Our recipe today pays tribute to a product that for many years, more or less since the 1800s, arrived in our Colombia from the French Antilles. It is our desired and aromatic “coffee” that today is part of our economy and that, thanks to the enthusiasm and creativity of its growers, today presents a variety of flavors that circulate around the world as one of the best in softness and smell.

His story? is quite extensive, even if it has a date of appearance such as the 13th century in Abyssinia, today it is Ethiopia where the coffee tree originated. And how beautiful is a coffee tree, seeing a vast coffee plantation gives joy to the heart, we believe it is ours. But it is believed that the energizing property of coffee was known long before that century…

By the way, here in our country we do not mark in the statistics as a good coffee consuming country and we say that we have the mildest and there are different types: origin, sustainable and certified. Of course, we are good exporters of this wonderful grain. Coffee is rich in antioxidants and don’t worry about what is said to make you sleepless… There are people who drink coffee before bed and sleep soundly.

If I keep talking about this wonderful bean, we won’t finish this weekend and the recipe will remain in my super coffee book. A simple recipe to make a special lunch for guests.

RECIPE: ROASTED CHICKEN WITH COFFEE AND PANELS

INGREDIENTS

1 – teaspoon of salt for each pound of chicken

3 – spoon of finely ground coffee

two – tablespoons of panel powder

1 – crushed garlic clove

1/2 teaspoon freshly ground black pepper Save $

1 – 3 to 4 kilograms of whole chicken

3 – spoon of soft butter

PREPARATION

Mix well the salt, coffee, panela, pepper and garlic. Season the chicken with this mixture on all sides and inside the cavity. We put it in the refrigerator and leave it for at least four hours. Heat the oven to 190-C.

Take the chicken out of the fridge about 30 minutes before you put it in the oven and brush with melted butter and bake for about 45 to 60 minutes. Allow to rest before slicing and serve on a platter on a bed of assorted lettuce and tomato slices.

NOTE: If you don’t want the whole chicken, you can also do with the loose pieces. For an afternoon of barbecue with friends and many cold beers.
