A little sauce history
The origin of sauces dates back to Roman times. Its first processing was with fish guts, which were fermented in the sun and seasoned with regional spices. This creation is attributed to Marcus Gavius Apicius in the 1st century BC, becoming known over time in one of the most desired of the upper class, being exhibited on the nights of their banquets. Already in the 18th century, this special and delicious preparation began to be refined, taking on more aromatic and elaborate flavors.
Experts on this subject have defined this gastronomic creation as “a liquid mixture of hot or cold ingredients intended to accompany different ingredients”. It is ideal for layering and conquering the taste buds, and according to the story it is the first “challenge” for the kitchen apprentices, who must show their skills by making this sauce.

- 1 kilogram of ribs
- 2 lemons

Let’s marinate our ribs with thyme, oregano, paprika, salt, garlic powder, black pepper, Dijon mustard, organic panela powder and olive oil. We cover it with aluminum foil and take it to a Preheated oven at 180° for 1 hour and 30 minutes.
We remove it from the oven, add our BBQ sauce and take it again baked for another 10 minutes.
For the homemade BBQ sauce
Add to a saucepan over medium heat. fry the white onion and finely chopped garlic with a little olive oil and butter. When the onion is transparent, add it brown sugar, soy sauce, Worcestershire sauce, Dijon or grain mustard, ketchup and let be reduced. At the end, we mix them.
For the salad
Add to a bowl juice of 2 lemons, purple cabbage, brown sugar and salt, cover and leave to marinate for 1 hour in the refrigerator. After this time, add fresh coriander, red onion, pineapple cubes, salt, pepper and olive oil.
For ripe plantains
we add olive oil and we take in Air fryer at 180° for 10 minutes. After this time we add country cheese and let it cook for another 2 minutes.
